How do I, go about make it so everyone for that project, gets an email, when a new message is added ?
You just have to put check marks next to the people you want to get emailed

Is there anyway to make this so the tick is already there, so they would have to untick if they didn't want it sent

I don't think there is currently an option to change that default.
