I'm new to project pier, I am liking it very much so far. For Tasks, there is only an option to create a Task list and then add multiple tasks under it. What if i need to just do a single task and there is no need to create the Task List and the subsequent description? Am I missing something?

that behaviour is by design. You have to have a task list to gather the tasks. When you see PP's concept page (http://projectpier.org/manual/tour/concepts) you see that milestones are the glue which hold everything together - messages and task lists. Under this assumption a ms is reached when every task list is finished.
